So, being low carb doesn't mean you have to give up chocolate. I have probably stated many times that I indulge daily in 85% dark chocolate. For a while they didn't have any at Dollarama but they did today and I bought 20 bars :o!!! I would have bought more but DH wasn't too impressed as it was, lol!
So I am going to add a little Easter Chocolate treat tutorial. I love making tutorials, I just hate uploading the pics so you know this is special ;)
First of all, get out your double boiler. If you don't have one, you should, lol! I just use a metal bowl in my medium sized pot or you can simply use a small pot inside a bigger one. Put about an inch of water in the bottom pot and bring to a boil. Put the chocolate in the top. I used two 100g bars broken up with a little liquid stevia and coconut oil. I will not add the coconut oil next time as it makes it too soft to handle, but I'll get back to that.
After the water is boiling and you have the top pan on top of it, you can shut the heat off and just stir that lovely chocolate until it is all melted and luscious! Look how it sparkles; it almost looks like milk chocolate but fortunately for me it's not :D
Then it is time to pour it carefully into the moulds. I wasn't being very careful as you can probably see. The big bunnies were too full and the chocolate ran over the sides trying to carry it to the freezer, so I ended up filling all the moulds. Next time I will put it on a plate to transfer it to the freezer.
So yes, after the moulds are filled, put them in the freezer until the chocolate hardens and separates from the moulds.
Carefully turn out of mould, not hastily as I did breaking the poor bunny ears, the best part. I found the coconut oil also made it soften almost immediately after removing from the freezer so from now on it will just be straight up chocolate for my moulds even though coconut oil adds a wonderful smooth taste. With the coconut oil it starts melting in your hands right away and if you want to enjoy it beyond a bite or two, you either better be prepared to lick your fingers or be close to where you can wash them ;)
And lastly, enjoy! That is the best part about chocolate. I love making chocolates and have been for about 10 years. I wasn't as careful as usual but being a little careful will yield better results.
