..you get back up again! I had a few bites of things I shouldn't of at the luncheon and when I got home, I ate one of the rolls that I made which everyone RAVED about. The smell about killed me! I picked the smallest one, about the size of a Timbit and whoa boy! It WAS good! I'll probably pay later, but I plan to eat clean until Christmas when I may allow myself a few more bites of things I shouldn't have. The rebellious part of me is screaming "Sez who? Who says I can't have something". I don't believe anything should be forbidden otherwise it can become an obsession for me. I have to not want it, or maybe another way to put it is to tell myself I don't need it. I need to be able to have control over food so I don't let it control me. Ok, the roll was me kind of getting out of control, but there are worse things I could of done. Yeah, yeah, the cherry ball I ate was probably way worse but it made me feel all buzzed as I'm not used to sugar and it wasn't pleasant, kind of like the time I drank too much energy drink and thought I was going to die. Very unpleasant.
So this is me getting up again :D I can't let the weight I have lost come back (although I am retaining some water right now so I was up a pound or so this morning. Too much sodium and not enough water).

Cauliflower Crust Pizza
She (Jamie Van Eaton "Cleochatra") originally posted this at a message board I frequent and in her blog, but here it is on her LC Column (since it doesn't link to her blog anymore): Cauliflower-Pizza-Crust-Worth-its-Wow-in-Gold
Basically, you take a cup of cooked, "riced" (I kind of mashed mine) cauliflower that has as much of the liquid pressed out that you can get. Mix with an egg, a cup of grated mozza and your favorite pizza spices (she recommends 1/2 tsp fennel, 1 tsp oregano and 2 tsp parsley but I just used a few shakes of basil Parmesan cheese).
Then what I do is dump it on a sheet of parchment paper on a pizza sheet and press it down into a pizza shape. This amount nearly covers a standard size pizza pan. IT says to bake at 450 for 12-15 minutes but I think I did mine at 400 for about 20 minutes since I didn't want to spend 15 minutes trying to keep the smoke detector from going off (although I still had to).
Then top as you would a pizza and broil until cheese is melted and serve! Yummy!!!
I freeze it on the pizza sheet to retain it's shape and keep the parchment papers between them so they don't get stuck together. You can bake them from frozen as they are fairly thin and don't take long. This is great as it holds its shape so you can pick it up and eat it javascript:void(0)like real pizza. Two things I would find very hard to live without are pizza and chocolate (I think that's a pack of my 85% dark reserve chocolate in the corner there, 5 net carbs per half bar, 50g!! I ate a full 100g bar daily during my period and still lost weight :) ).
Down Again!
I had a three pound "Whoosh" last night, whoo hooo! I've broke down into a weight I haven't been in a couple of years. I had kind of a bad day yesterday though. I had a taco salad for lunch and felt pretty yucky after. I put way too much hot sauce on my food. I used to love spicy foods but I can't seem to handle them any more. Maybe moderate spice but not really spicy. We went to Mark's parents for supper and my stomach was still churning so bad that I couldn't eat. I felt terrible! She offered to make me a salad but I couldn't. Later I felt better and had some crustless quiche while the rest of the family had popcorn (and some 85% dark chocolate and pecans after that).
I thought I should share recipes here since some who may read this may enjoy them (I know I love reading recipes in other peoples blogs). So I will be doing recipe posts too. I have a food blog but I have kind of abandoned that and would like to keep all my low carb stuff in one place since I know it's not for everyone (or so they think, lol!). I may also post recipes I haven't tried but want to. This way they will all in a place where I can get to them easily instead of hunting all over the internet for the recipes I'm looking for. I can have good ideas once in a while, lol!
I should also post before and during pics because I think seeing my progress will help me so much. As much as I want to, I am not posting my weight as family and friends I know IRL may drop in and I am so embarrassed by what I weigh. As I get closer to goal, I will probably get more open about it. I'm not going to post my goal until I am closer as my goal is still technically considered overweight on the BMI charts. Oh and hey! I have lost 3 BMI points already :D. That is good!

I thought I would be writing more, lol! Well I am down 15lbs total now...yay!! I'm noticing little changes in my body. I will have to lose a lot for the big changes to come. I really hate being so overweight. The worst for me is I have "Batwings" which is the fatty skin hanging down from the bottomside of the tops of my arms. Ethan like to touch it **Constantly** and it drives me crazy! I hate it so much. For as many problems I have with the rest of my body, I would endure them all forever to have that cut off.
The other day I made up a ton of low carb stuff to have on hand. I made 4 cauliflower crusts for pizza (had one already, DELISH!!), a huge pot of pumpkin soup (sooo yummy!), turkey soup from leftover (mmmmmmm!!!!), mini raspberry cheesecakes (yummmy yum yum!), a "turtle" cheesecake for the luncheon Saturday (heavenly delish!), about 2lbs of taco meat for taco salads (yum!) and a couple of ham quiche (crustless but divine! Had one already). Last night I roasted up a couple pans of chicken to have on hand. I can't believe I am losing weight while eating this stuff! Of course I have hit the "not really hungry all the time" stage, so it's not like I feel like stuffing my face all the time. Even though it's Christmas I have been finding it pretty easy. I may cheat a little for Christmas, but just a little ;) (as in some starchy veggies and maybe a dessert if there is something I feel is worth cheating for, which there may not be since what I can have is better to me).
I am feeling bad for my brother. He is on an ultra low fat starvation diet. He says he's only eating 14g of fat a day! That is nothing! Apparantly he got very sick when he ate his favorite food, Bacon Mushroom Melt from Wendys. I would rather have what I enjoy. It's not like I'm stuffing bacon and greasy burgers down all day long; I eat healthy things like veggies and berries too, just ones that are low glycemic & not starchy. I can make things that I like. Food is essential to our existence and should be enjoyed, not feared. Of course you can let it get a little too cozy like I did to get myself grossly obese in the first place, but now I feel I have more control over it. It doesn't control me.
So this has been really easy so far. I feel more prepared mentally. The kids are constantly asking questions. They can't believe that sugar is not good for you, lol! I made the mistake of saying it's poison when they ate half a can of frosting while I was making a cake. I had to explain that too much sugar can act like a poison in your body and make you feel sick and if you eat too much for too long like I did, you can gain a lot of weight. I worry about Shaylee. She is generally a very healthy eater but even still she is so much bigger than other girls her age. The doctor said not to worry about it since she's active and tall.
The only down thing I am still really depressed. You know the kind where you could sit on the couch and just stare into space forever, or until something has to be done. The kids generally keep me busy but I find myself reading a lot to kind of escape (reading the "Little House" series right now). Christmas time is always pretty depressing for me anyway. I still have so much to do and I don't feel like doing it. I'm basically doing the bare minimum but that's ok. The kids are still having a wonderful Christmas season. I am going to get back in to see my counselor Karen as I think I just need someone to talk to since I don't really have any friends I can confide in about things which are even too personal to put here. I have been having a ton of horrible memories come flooding back from my childhood and I know she can help me through it.
TMI Ahead ;) : My IBS is also acting wonky. Every time I think I'm improving, I'll have a day (or days) I can't get out of the bathroom. I wish I could afford Colonix, which I have heard people singing its praises lately. I may start fiber drinks again as it seems to help some but I hate taking it in case there is something next day and it backfires and I have to spend more time in the bathroom instead of less.
Well, those are enough ramblings for today I guess :)

Getting Over Regrets
Sadly I deleted this blog but I am able to start over. Isn't that what life is all about, starting over? We fall down, we get back up. We dust ourselves off and get going again. I cannot have regrets for what did not work out in the past but I need to learn from my mistakes and not make them again.
I am so embarrassed that I have let things get so bad but for something positive, I am down about 7lbs over my highest weight at this point. I have tried every diet and they just don't stick. If I could get over my love of potatoes and bread, I could be fine. I cannot dwell on that. I must menu plan and stick to it or I could easily become sidetracked. I have my plan!
I cannot count how many times I have started a low carb diet but I really, really want to make this my last start. I actually started a few days ago and have been getting stuff in order. My first try was probably about 8 years ago and I have done it at least part of every year since that first time. Then I got bigger than ever every time I fell off. I need to get serious and commit. I have failed myself by not sticking to what I know works because this is the only "diet" that normalizes all my ailments and is the easiest way for me to lose weight. Done right I don't get cravings. On my most successful try, I lost about 60lbs in a couple of months. Then I binged and couldn't get back on track. I need to do what I can not to fail this time.
I will do this! I can become normal!! I can become healthy!!

New Direction
I have neglected this and it's not fair. I think I will take my diet blog in a new direction. I am attempting to go gluten-free since I suspect I either have an intolerance to it or I have celiac disease, which is actually in my family. My aunt has an 11cm tumor in her stomach from it so hearing that, I think I may go to the doctor and ask to be tested.
In avoiding gluten, I have to avoid wheat, rye, barley, oats and anything which contains even trace amounts of it. I also suspect other food allergies so I may have to do an elimination type diet to figure it out.
I have to lose weight. I got in the bad habit of snacking on chips since they are ok for me, taste good, are easy and comforting. Bad, bad habit. Also too much fat in general. I am eating less but it's more dense, high fat and protein foods. Need to stop that and get some balance! I need to eat more fresh food, raw foods, fermented foods, pro/prebiotic containing foods (like yogurt) which will help heal my gut.
I need to exercise or even just get up and move more. Since my accident earlier this year, I have really put off moving since it hurts my knee so much. Now my other knee is bothering me from over relying on it to do all my kneeling, which I do a lot of in the run of a day.
My weight is now at my known highest and hopefully finding and eliminating my problem foods will help, but I know that I have a lot of work that I need to do. I can't go on like this. I've done every diet known to man and the only one I have had success with is low carb. This will be similar but I will not entirely cut out sugar and starches, just the ones that are bad for me. I need fruit and it's nice to have potatoes and rice sometimes since strict low carb can get pretty expensive.
This will be a process, not a fad. It is not a diet, but a change in the way I eat which I need to be able to sustain for the rest of my life for health.

Quick Note

Things have been very hard for me. I'm struggling right now, especially with all this easter candy. Chocolate should be outlawed!! ;)
I am going back on plan tomorrow. It is "that time of month" and if I play may cards right, I should be able to even out weight wise by the time its over.
I also have a strong feeling that I have Celiac disease, so I should be more careful about what I eat anyway. I am even finding wheat products in some of the meat product I eat, so I have to be vigilant. This may be why I was having trouble losing.
I am also trying to exercise again. I seriously hurt my knee 3 weeks ago and while it's feeling better, it is still hard to do much of what I was able to. I bought the Walk Away The Pounds 3 in 1 DVD with the weighted balls from Walmart. So now I have no excuse :). I also have the tapes and have done them for years so I know I love them. It's just getting motivated to do it!! And motivation seems to be something I'm lacking lately :(

Quick post
Our computer died for a couple weeks so I haven't been able to post. I am down about 10lbs so far. I haven't done regular weigh ins, especially since I went carby a couple of days (and paid the price). Still, can't complain that I'm losing weight!
I've been trying to plan menus and that has been ok. It was hard to stick with them when the kids were sick. It would be like 9pm and oh, I haven't eaten all day, so I'd stuff down a few things. Hopefully things will normalize now, although having a bit of the stomach flu myself now I'm not holding my breath.
I love the cauliflower pizza and lasagna. I'm bringing a lasagna to the Enrichment dinner Thursday as at least one other sister isn't eating carbs. I think she'll love it. It's so yummy!!!

No Rumblies Today
The stomach is calm today. There are no weird noises to be heard, which is nice :)
It amazes me how there are days when I low carb that I'm just not hungry. When I'm eating any other way, I always feel like eating or just picking. I just realized, "oh yeah, I haven't really eaten anything today" and it's after 2pm! That just seems incredible.
I need to make up menus but I find it hard to get going on it. I'd also like to try a fancy recipe for supper but not sure what. There is a White Castle Hamburger pie recipe that I'd love to make when I have some hamburger. I think even the kids might try that. We'll probably just eat up some of the soup I made yesterday (the kids wouldn't touch it with a 10 foot pole as it has too many greens in it, lol! Actually, I feel that way about kale, but I choke it down as I know it's super good for me but the texture is blech!!)

Here I Go Again!!
Gee, this is a familiar ride. I seem to keep getting back on but this time I want to make it stick. I know it works. I always allow myself to fall off and things get worse than they ever were. I deleted my old diet blogs as I just could not make them work so what's the point in having the evidence there ;)
How am I going to make it work this time? I really think blogging about it will help. I have been pouring over some awesome low carb blogs and they have really inspired me. This one is the best: http://cleochatra.blogspot.com/ She posts the most awesome recipes!! I have made her oopsie rolls and they were wonderful! I was even able to use them for sandwiches. Shaylee seemed to enjoy them too, lol!! She created a pizza with a cauliflower crust that look amazing, even though it may sound gross. I hope she puts the recipe in her blog soon (she belongs to a LC message board I visit).
I started last Tuesday and I'm down 4lbs so far. I seem to lose less every time I restart, but I think getting older has a hand in that too. That's ok as I'm enjoying what I eat and know that I don't have to be deprived in anything. My body is doing some weird things right now including retaining a lot of water. I try to drink a lot and not have too much sodium, but it's hard.
I am going to start exercising this week. I have been really down about my gym closing and haven't been doing anything in it's place yet. I'm going to try Turbo Jam and if that is too hard for right now, I'm going to do the Walk Away the Pounds, my old standby. When the weather is decent, I'd like to hit the walking trail on the old rail road tracks again. I think the kids would enjoy it.
I am debating posting what I eat. It would mean accountability for me, but then again it would mean that I would have to be accountable ;). I would be scared I would scare away people with what I eat, lol!
I did have some low carb chocolate today. Maybe a little too much. It has a negative effect on the digestive system resulting in what felt like a tornado in my stomach. I've never heard my stomach make sounds like that before. I think I scared the kids, lol!
Well, it's super late. The Oscars just got over and I didn't pay much attention to them. We're not really into movies so it wasn't a big deal. But I'm tired and need my beauty sleep :)
